Me-mom-ial Day Weekend!

Okay, so maybe that "word" doesn't really work, but I'm getting excited because not only are we coming up on a 3-day weekend, but my mom's coming to visit for belated Mothers Day celebrations since I was out of town on the actual day.

While it feels a little hectic making plans and making things presentable before she gets here (particularly since we don't have a guest room), I can't wait to spend some time together! I also get to make her an early birthday dessert since it's only a couple weeks later. And you know how I can't turn down baking something delicious for people I love!

In fact, this past weekend, I made this Frozen Blackberry-Lemon Chiffon Pie. Sooooo light and cold and tasty! It was reminiscent of whipped yogurt in the sense that it was melt-in-your-mouth fluffy because of the whipped egg white. At only 166 calories a slice, I felt no guilt chomping down on mine. Highly recommend!

I think my favorite part of making this was that, aside from the short time needed to heat the simple syrup, there is no heat involved. And in Florida at this time of year, especially in this year of the heatwave, that is something you don't take for granted!

Anyway, I also wanted to squish in here my plans for rhubarb this year!

I have three recipes in mind and it stresses me out a little that at last week's farmers market, there were already some good-looking stalks and rhubarb season is so short! 

There's never enough time to make all the things I want to make ... sigh.

I'm also dying to make a pinapple upside-down cake ... mmmmm...

So we'll see what I get to this season!
